Recipe – Vegan Pancakes with Sour Cherries & Vanilla Frozen Dessert

I just had to veganize this, because this was my favourite dessert when I was living in Germany.
Serves – 2 people
Dry Ingredients – Pancakes
1 C Wholewheat flour
1 Tbsp baking powder
Wet Ingredients – Pancakes
1 C nut milk (Almond, rice or soy)
2 Tbsp maple syrup
1 tsp vanilla extract
1 Tbsp Nuttelex (Vegan margarine)
For decoration – Icing Sugar
For balancing the flavours – Vanilla Frozen Dessert

Instructions – Pancakes
Place the dry ingredients into a bowl and combine them
Then place the wet ingredients in the middle of the dry ingredients and whisk together
Place a large non stick frying pan on the stove on a medium heat then and place 4 Tbsp of
the mixture in the middle of the frying pan and spread around in the shape of a circle
Wait until air bubble appear around the edges and then with a spatula flip the pancake
onto the other side and then fry until cooked
Remove the pancake from the frying pan and put it on a cooling tray

Ingredients – Sour Cherries
400g Sour cherries, pitted
1/2 C raw sugar
1 Tbsp corn starch
3 Tbsp fresh lemon juice
1 tsp vanilla extract
Instructions – Sour Cherries
Place all of the above ingredients in a pot and bring to a boil then immediately turn down the
heat and leave to simmer for 10 minutes.
You should see that the sour cherry liquid will thicken up

Bring it all together…
Dish the pancakes up on a plate then sprinkle some icing sugar on top
Add a couple of spoonfuls on hot sour cherries to the plate and finally add the
Vanilla frozen dessert then serve
