Recipe – Raw Vegan Lime Tart

Raw Vegan Lime Tart

A delicious raw vegan lime tart. Simple, but delicious.
1 C Medjool dates
1 C raw almonds
1 C raw cashews, soaked for 4 hours
3/4 C full fat coconut milk
1/4 C coconut oil, melted
1/2 C lime juice – fresh limes
1 tsp lime zest
1/2 C Maple Syrup (The real stuff)
Note: taste the filling and adjust it to your taste palate. I prefer a more acidic flavour
so I added the lime juice of one more lime.

Raw Vegan Lime Tart
Instructions – Base
Add the dates in a high speed blender and blend until the form a ball shape in
the blender, then remove and place to the side
Add the raw almonds into the high speed blender and pulse until they are
coarsely chopped
Now place the dates together with the raw almonds and blender until they
are combined together
Press the base mixture into a 20cm tart tray with a spoon and spread
evenly over the base
Instructions – Filling
Rinse the cashews then blend them, after this has finished add the
coconut milk, coconut oil, lime juice, lime zest and maple syrup then blend until the filling
has a liquid consistency
Pour the filling into the base
Freeze the raw vegan lime tart for 4 – 6 hours or overnight
Remove from the freezer after the time and place in the refrigerator which will keep for 2 weeks
