Recipe – Sambal Oelek (Indonesian Chilli Paste)

This is a super super hot chilli sauce. If you find these chillies then beware of the heat.
Sambal Oelek (Indonesian Red Chilli Paste)

2 cups fresh Chillies – Bhut Jolokia, 7 Pot Trinidad, Habebero , Thai Bird’s
5 Spring Onions, diced
2 inch piece ginger, chopped
4 cloves garlic, chopped
2 Tbsp peanut oil
2 Tbsp lime juice
1 lime, zest
2 Tbsp lemongrass paste
1 Tbsp raw sugar
1 Tbsp water
Ingredients – Sambal Oelek (Indonesian Red Chilli Paste)

Combine the chillies, ginger, garlic, lime juice, lemongrass paste, water and spring onions in a blender/food processor.
Puree until smooth
Keeps in a refrigerator for several weeks.
