Recipe – Lentil, Pumpkin & Sweet Potato Pie

Another delicious off the cuff Winter’s dinner recipe. Vegan as always !! So Delicious !!!
Lentil, Pumpkin & Sweet Potato Pie
50g Tomato puree
400g cooked lentils
400g diced tomatoes
1 C peas
1 brown onion sliced
1 red capsicum diced
1 Jalapeño sliced
1 Tbsp dry oregano
2 tsp curry powder
500g cooked & mashed pumpkin
300g cooked & mashed sweet potato
300g cooked & mashed potato
100g nutritional yeast

Preheat the oven @ 200C/390F
Saute the brown onion and jalapeño
Combine the brown onion, jalapeño, tomato puree, cooked lentils, diced tomatoes, peas, red capsicum, pumpkin, sweet potato
Then when all of the ingredients above are combined add the dry oregano and curry powder
Spoon the combined mixture in a pyrex bowl and then add the potato on top and then sprinkle nutritional yeast on top
of the potato
Place in the oven at 200C/390F for 30 minutes
Serve to a few very lucky people !!
