Recipe – Spinach Fettuccine Pesto

Pesto pasta is quick and easy to make. It is for me so delicious I am craving for more
afterwards I would not lick my plate, but I get an itch to do that..
  Spinach Fettuccine
1 1/2 C chopped fresh basil
1/2 C olive oil
3 Tbsp pine nuts lightly roasted and chopped
50g Nutrientinal yeast
1 garlic clove
125g Gluten Free Spinach Fettuccine
2 Red Capsicum thinly Sliced
200g Pumpkin sliced and steamed (5 minutes with a bit of water in the microwave)
5 spring onion (thinly slice one for decoration)
2 zucchini
400g artichokes slices in half
 Spinach Fettuccine
Blend the fresh basil, half of the olive and then pine nuts for 2 minutes, then add the second half of olive
oil to the mix if the mixture is too think add some water.
Stir fry lightly the red capsicum, spring onions, zucchini and artichokes.
Combine the ready fettuccine with the pesto until it is well coated.
Then add the red capsicums, spring onions, zucchini, pumpkin and artichokes.
Garnish the thinly sliced spring onion on top and serve to a very lucky person 🙂
