Recipe – Oven Baked Rösti & Indonesian Crispy Corn Fritters

Delicious vegan rösti and corn fritters for dinner tonight !! I love röstis as they remind
me of living in Germany. Making homemade corn fritters are easy and taste much better than
bought. Okay I am bias because I love all of my cooking !!!
Vegan Indonesian Crispy Corn Fritters
Ingredients – Oven Baked Rösti

450g waxy potatoes (Desiree, Pontiac), peeled
1 medium size onion
30g vegan margarine, melted

Instructions – Oven Baked Rösti
Preheat oven to 425F/220C.
Cook potatoes in pan of boiling salted water for 7 minutes, or until just tender. Drain.
Prepare a 12-hole muffin pan by brushing with a little of the vegan margarine.
Grate potatoes & onion, mix together in a bowl & pour vegan margarine over mixture.
Season with salt & mix well. Using 2 forks, divide mixture among muffin holes, gently pressing it in.
Bakethe rosti in oven for 45 minutes, or until golden.
Using small palette knife, loosen each rosti around the edge & lift out. Serve on warm serving dish.
