When I was living and working in Thailand I really was exposed to authentic Thai food which blew my
mind from all of the tropical fruits, curries, salad and dessert dishes.
This one is very easy, but one of my favourite. Spicy Thai Fruit Salad. Today I had an opportunity to
make it as there was a BBQ event at my work which I knew there would not be any food for me to eat.
1 Bunch of Grapes
1 Carrot, julienned
1/2 Red Apple, diced with skin on
1/2 Green Apple, diced with skin on
Handful Cherry Tomato, halved
1 Tablespoon Lemon juice
1 Tablespoon Soy sauce
½ Teaspoon Garlic, finely chopped
3 small Red or Green chilli, finely chopped
1 Tablespoon Freshly Squeezed Orange Juice
1/2 cup raw cashews or almonds, crushed to garnish
To make salad dressing, mix together lemon juice, soy sauce,garlic, chilli and orange juice in a bowl.
Add apples, grapes, carrots and cherry tomatoes in the dressing bowl. Mix well.
Sprinkle with crushed cashews or almonds
