This is a very tasty pickle. My favour actually of them all. In the refrigerator it can keep for two months and one month in the pantry

Ingredients
Main
1 green mango
Dry Mix
1 1/2 Tbsp red chilli powder
1 1/2 Tbsp mustard powder
1/2 tsp Fenugreek powder
1 Tb crushed garlic
A pinch of turmeric
1 Tbsp salt
Tempering
1/2 C oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
2 o3 pieces of red chilli
Pinch of Asafoetida (hing)
6 garlic whole cloves
A handful of curry leaves
Instructions
Dry Mix – Mix together in a bowl, keep aside now you have to make a tempering
Tempering – In a frying pan Heat oil, mustard seeds and red chilli until for 2 minutes, now add asafoetida
and whole garlic pieces heat for a further few minutes until the cumin and mustard seeds become fragrant. Now add the
curry leaves and mix for 30 seconds, then remove the frying pan from the heat. Leave the tempering to cool down.
Main Ingredient – Wash and cut your green mango into half a thumb size pieces
Combine – together the Dry Mix and tempering ingredients together in a bowl, once these are combined add the
mango pieces. Now the green mango pickle is ready to be left for 24 hours in the refrigerator.
