I went to a cafe with a work colleague after a meeting with a client. In the cafe there was a beautiful looking citrus tart.
I love citrus desserts. Obviously this one was not vegan so I decided to make one this weekend. If you like citrus desserts
like me then try this one. It is easy and delicious. The base has a custard taste which is like a shortbread texture,
and the citrus taste of lime, lemon and orange is beautiful. Enjoy !! PS I had some blueberries with it too….
Time to make this delicious citrus tart: 35 minutes
175 g vegan margarine (Nuttelex here in Australia), chopped
⅓ C stevia or caster sugar
2 Tbsp custard powder
1⅓ C plain flour
egg replacement equivalent to 4 eggs
½ tsp finely grated lemon rind
½ tsp finely grated orange rind
½ tsp finely grated lime rind
⅓ C plain flour
1 C caster sugar
¼ C lemon juice
¼ C orange juice
¼ C lime juice
Stevia or Icing sugar, to sprinkle on top
Preheat oven to 180°C
Grease a 23 cm flan tin.
Base: Melt butter in a large microwave­safe bowl. Set aside to cool.
Stir in caster sugar.
Sift flour and custard powder over the butter mixture.
Using a wooden spoon, stir until a soft dough forms.
Transfer to prepared flan tin.
Press into pan. Bake for 15-20 minutes or until slightly golden.
Remove from oven and set aside to cool whilst preparing the citrus filling.
In a large mixing bowl, egg replacement, rinds, sugar and flour together until smooth.
Add juices and whisk to combine.
Pour over cooked base.
Bake for 36 minutes or until just set
Cool completely in tin.
Best served cold. Dust with stevia or icing sugar just before serving.
