Spicy Noodles
Spicy Noodles

This is similar to a dish I ate in my travels to Vietnam. It is pretty easy and takes only about 10 minutes to make.
This is what I call fast food like throughout Asia fresh vegetables are stir fried with chilli and soy sauce with noodles.
200g noodles or thin spaghetti
1 cup of spring onions
1 cup green beans
1 cup artichokes
1/2 cup of cherry tomatos
1/2 cup of water chestnuts
1 1/2 cups of chickpeas
2 Tbsp Ketjap Manis soy sauce this is low in Sodium & a tat sweet too 🙂
1 tsp garlic
1 cup Seitan (Seitan – Recipe )
6 thai chillies (or to what your pain tolerance maybe)

1. Saute garlic and chillies for 2 minutes then remove and place them in a bowl
2. Chop spring onions, artichokes, green beans, water chestnuts, cherry tomatoes and place them in a
medium heated frying pan for 3 minutes
3. Make your noodles or spaghetti
4. Add to number 2 the chickpeas, seitan and ketjap matis
5. Stir these for another 2 minutes and add your tomatoes, chilli and garlic
6. Now the noodles/spaghetti should be ready… now simply plate up and enjoy
Note: The chilli heat is balanced well with the sweet soy sauce and cherry tomatoes
All of the other vegetables should be medium to hard in bite, definitely not soft
